Yankee Doodle went to town
Riding on a pony
Stuck a feather in his cap
And called it macaroni.
WHY?!?!?!
Well he obviously called it macaroni because calling it cheeseburger would sound stupid and maybe he was in a macaroni mood.
WHY DO THEY CALL YOU LIME!?!?! HUH!?!?!? HUH?!!??
-Dun diss tha macaroni-

It was a reference to the Macaroni club in London frequented by fashion conscious, foppish young men.( dandies).
Just a way to fill in the rhyme & point out the nature of the club & "Yankee Doodles"

At the time of the song, a "macaroni" referred to one at the height of fashion. It referred to the idea of "Italian fashion/trend setters." So, to be "macaroni" was to be fashionable.
It was originally a mocking song, making fun of the "colonial rubes," who lacked the sophistication & "fashion sense" of the "Motherlanders." The colonists, in their rebellion against England, spat the song back, reveling in their "misunderestimation" by the English. The rest, as they say, is… history.

The song “Yankee Doodle”, from the time of the American Revolutionary War, mentions a man who "stuck a feather in his hat and called it macaroni," the joke being that the Yankees were naive enough to believe that a feather in the hat was a sufficient mark of a macaroni. Whether or not these were alternative lyrics sung in the British army, they were enthusiastically taken up by the Yankees themselves
